picked cherries were semidried in African beds. Drying process was
interrupted for 5 days when water activity reached Aw=0.85; and
then the sun drying process continued to get the final product.
A surprisingly Swiss Chocolate fragrance invited to taste a
malic acidy with some spicy hints and a very deep and long
finish.
