Description:

The variety and natural yeast fermentation highlight floral aroma, tangerine acidity and raspberry notes combined with a honey sweetness and plum lingering aftertaste.
Coffee cherries were inoculated with lactic acid bacteria and then fermented under anaerobic conditions for eight days. The drying process was done in African beds, avoiding temperatures over 40° Centigrade. Processing time 40 days.
