Description:

There is a saying that the smallest recipients contain the best perfumes. Well, this Dwarf Geisha variety is the perfect example! Intense fruit fragrance produced by the natural process and honey sweetness combined with red apple flavor and orange acidity, turning into a fine red wine lingering aftertaste.
We used fermentation process under anaerobic conditions for eight days. Cherries were then dried in African beds, avoiding temperatures over 42° Centigrade. Processing time for 40 days.
