This process is the traditional Natural method at the farm. Fresh cherries were semidried in African beds. Drying process was interrupted for 5 days when water activity reached Aw=0.85. Then, sun drying process continued to get the final product.
In this cup profile, you will notice an intense butterscotch sweetness, with a delicate jasmine scent. Persistent and bright acidity, with some strawberry notes in the aftertaste.
