Evolution that enhances the flavour

Regarding taste, it is inevitable to recall red fruit flavors. Sweet and juicy berries; ripen red apples or plums. All variables count to produce these profiles. Cherries were harvested between 18-23 brix, meaning that the ideal sugar was achieved. Geisha and Pacamara nano and micro-lots were natural processed, with anaerobic, Lactic Acid Bacteria and /or highlighting the Yeast fermentation. African beds have been the preferred drying process because the stable air flow provided between 21-35 days.
