Ripen cherries were inoculated with Saccharomyces cerevisiae and fermented for 60 hours. Then, dried under anaerobic conditions.

The result, just as its name recalls, an irresistible dark chocolate fragrance, with red ripen grapes type of acidity and a red wine aftertaste. A very consistent coffee and velvety mouthfeel.
